Peanut Butter Chocolate Chip Muffins

Who doesn’t love the combination of chocolate and peanut butter? Honestly, people think I’m crazy, but I actually don’t like chocolate all that much. I’m willing to eat it with peanut butter though! Today I’ve got a recipe I’ve been working on for a little while. It’s my version of the perfect peanut butter chocolate chip muffins. It’s not too sweet, and it’s the perfect combination.

Dry Ingredients
  1. 1/2 cup peanut flour
  2. 1/2 cup all purpose flour
  3. 1 tsp baking powder
  4. 1/2 teaspoon cinnamon
  5. pinch of salt
Wet Ingredients
  1. 1 tsp vanilla
  2. 1/4 cup honey
  3. 1 egg
  4. 1 cup coconut milk
  5. 2 tbsp peanut butter
  6. mini semi sweet chocolate chips
Instructions
  1. mix all wet ingredients together in a bowl
  2. combine dry ingredients
  3. add to wet ingredients
  4. stir until thoroughly combined
  5. mix in chocolate chips
  6. pour into muffin tray
  7. sprinkle addition chocolate chips on top
  8. bake at 350 for 25 minutes or until toothpick comes out clean
Notes
  1. you can substitute any milk for coconut milk

These muffins aren’t super light and fluffy, but a little more on the dense side, which I really like. I use THIS peanut flour from Amazon, you could use almond flour, but I seem to have issues with almonds, so I’m off the almond train these days. 

I use THESE silicon baking cups from IKEA and they are literally amazing. They are only $4.99 for a 9 pack, they make clean up a breeze, and they don’t stick to your muffins! If you don’t have an Ikea nearby, don’t worry, because you can find these at most stores these days. 

I typically eat these as my morning snack, or evening snack, or anytime snack ;-).
