Italian Stuffed Peppers

I have always loved stuffed peppers and stuffed cabbage. Typically I make my stuffed peppers with more of a mexican flavor, using rice, beans, corn, chili powder, cheddar cheese. However, the last couple times I’ve stepped into the kitchen to make stuffed peppers I’ve made them with more of an Italian flavor. Recipe Card

Stuffed green bell peppers with an Italian twist

Ingredients
  1. 3/4 ground beef
  2. 1/4 onion
  3. garlic clove
  4. 1/2 cup cooked rice
  5. 1 cup pasta sauce
  6. basil
  7. oregano
  8. thyme
  9. 4 green bell peppers
  10. 1/4 cup Parmesan cheese
Instructions
  1. Wash and dry bell peppers.
  2. Cut off top and de-vein peppers.
  3. Place peppers on baking sheet and bake at 350 degrees for about 10-15 minutes.
  4. While peppers are baking, make filling.
Filling
  1. Chop onion and garlic.
  2. In large pan (using avocado or olive oil) cook onion until translucent.
  3. Add fresh garlic.
  4. Add beef and saute until cooked.
  5. Add cooked rice and pasta sauce until warm.
  6. Add basil, oregano, and thyme.
  7. Mix in Parmesan cheese.
  8. Remove peppers from oven, add filling to peppers, return filled peppers to 350 degree oven for approximately 15-20 minutes.
  9. Sprinkle additional Parmesan cheese on top of peppers.
Notes
  1. Ground turkey or a vegetarian option could easily be substituted for ground beef.
