Southwest Chicken and Rice from Meaningful Eats

How many times have I mentioned that I love my Instant Pot? Because I DO. When I first got my instant pot I didn’t know what to make, so I turned to trusty Google to search for some recipes.  This recipe from Meaningful Eats was one of the first I came across, and I can’t even count how many times I’ve made it since then.  I don’t even need the recipe anymore, because I know it so well.

Instant Pot Southwest Chicken and Rice Recipe – By Meaningful Eats

Some times I leave the beans out, sometimes I add black beans, really you can make it however you want! I posted this picture to Instagram and so many people asked for the recipe, so I decided to share it here as well!

I usually top mine with guacamole or avocado and either extra salsa or hot sauce. This recipe is great for meal prepping, takes very little effort, can be frozen after it’s made, and it’s one of the few things I can eat on Friday when I made it on the previous Sunday. I’ve made it with both regular brown rice and with Trader Joe’s Brown Rice Medley, and they both work fine.  Lately I’ve been taking it out of the freezer and putting it on top of a salad, to get some extra veggies in. It’s really pretty versatile. You could definitely make this recipe in a crock-pot, as well, if that is what you have in your kitchen. Enjoy!
